Grilled Salmon with spaghetti Aglio E Olio (Garlic and oil)

I am going to admit something really silly!  I am a Punjabi but my love for fish is kind of like Bengali. I can have fish for all my meals and still crave for more.  This is a great meal and a good combination Salmon with Italian made, oil and garlic Pasta along with side of sauteed veggies.

Reason why i Love it? It doesn’t require a lot  of ingredients but you get the true flavor of whats served! And a happy family:)

Salmon is my most favorite fish. I am sure you have made it with few different recipes and marination. I love this marination as it goes really nice with this pasta.

Grilled Salmon

Grilled Salmon

Ingredients

  • 1/2 tsp rosemary
  • 1 tbsp crushed garlic
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1 cup Cilantro
  • 1 1/2 tbsp ginger
  • 1/2 lime

Instructions

  1. Blend (cilantro, ginger, lime) together and make a paste.
  2. Mix the paste in remaining ingredients (garlic, olive oil, salt/pepper), apply it over salmon and leave it aside for 1-2 hours.
  3. Bake it for 20 min on 325 F

This is the most famous pasta in Itlay. Once you make it, you will know it why for obvious reasons!.  It is also called Aglio e Olio pasta that means  garlic and olive oil pasta :-)

This is my kids fav pasta as in this recipe I serve them veggies by side which makes my kids happy.

Spaghetti Aglio E Olio

Spaghetti Aglio E Olio

Ingredients

  • Your favorite spaghetti (I used flavored angel hair, spinach & tomato)
  • Lots of Garlic (I used 4 tbsp) (Finely sliced)
  • 1 cup parsley
  • 1/2 cup of olive oil
  • salt and pepper to taste
  • Parmesan cheese as needed

Instructions

  1. Cut the garlic into thin slices (important for this recipe)
  2. Boil the pasta as per the instructions on the bag. While boiling i used 1/2 tsp of salt and 2 tbsp of olive oil)
  3. Drain the water out of paste, while draining leave 1 cup of pasta water by side.
  4. DO NOT ever wash your pasta.
  5. Take a pan, put it on medium low heat, pour 1/2 cup of olive oil in it, put thinly sliced garlic on the pan and keep stirring it for 10-12 minute, you have to keep stirring until garlic turns light brown. Cooking garlic on low medium heat releases its flavor in oil which makes pasta delicious.
  6. Add parsley cook it for only a minute, add 1/2 cup of pasta water that was kept aside. let it come to a boil.
  7. Add pasta ,mix it nicely using tong. Add salt and pepper as needed.
  8. Put the pasta in a plate, server it hot and garnish it with more parsley and grate a good amount of Parmesan cheese on top.
  9. Delicious!

Ingredients

  • portobello mushroom
  • red pepper
  • green pepper
  • broccoli
  • corn

Instructions

  1. Saute all the vegetables with some butter
  2. Add some salt and pepper to it.
