It’s midnight and I had a long day already but when it comes to food my eyes are always wide awake. While cooking this I did feel like I was in India as I was cooking this with my neighbor, It worked out nice as she also had time at that time :)

We ended up cooking a good big batch and lots of chit chatting :)

Kashmiri Rice

This recipe was in my mind from couple of weeks, but to make it on Holi felt special and very festive. I enjoy all the festival with different cooking and cuisines. This is traditional and a fun recipe with endless varieties, reason why i like it is because it healthy and different and very festive and it has pretty much all the goodies you can imagine, Fruits, veggies and dry fruits.

This recipe can be made in many different ways. This is just my way of doing it how I like it and to make  it my own recipe with the right amount of flavor and essence:)

Vietnamise Summer Roll

I am no expert or a chef , but one thing I know for sure is that I love cooking , I get excited for trip to grocery stores, I like the freshness of fruits and vegetables , their color and crunch :)

I know it gets over whelming some times to cook different things and make everyone happy, but I know  that this is one thing I can never run away from or get tired. As this is one of the recipe you can really do so much, like just simply making your own salad with your preffered veggies and fill it in the roll.

Last week has gone very busy, lots of cooking, my kids,  clients, it’s never ending , this is one of the posts has been in my draft and finally getting time for posting it.

Daal Pitthi Poori

Rain or shine, hot or cold, this post doesn’t need any introduction loved by all the generations but kids cannot have enough of it. Pooris made to perfection, nice crisp and every single poori will be puffed :) and will stay puff:)

Why is this different?  This is called a daal pitthi poori, made with yellow daal and spinach and spices healthier version of the old regular poori and have more nutrients , and more crisp, this you can serve with any sabzi, mostly it goes best with aloo masala but my hubby and kids likes this with karari bhindi ( crispy okra)

It’s midnight and I am not sleepy . My mind is wondering for what should I cook next? How can that dish go with those spices, food, combinations spices, drinks, desserts and its endless… I know sounds too much but that’s what in my mind now a days,,,and here comes a sudden thought on having a Rasoi party and there goes a message to friends on a social networking site and here I have a bunch of great chefs with great food at my door :) as we planned!

Paneer Panini

I am surprised,I know its tough but i love to make an effort to write about how i actually feel about the recipe what goes in my mind before making it to the perfection to get that right amount of flavor desired look and taste!  But believe it or not I find it is so much fun and that’s how I feel connected to all of you by portraying   the right image from my mind on to a plate. :) I go to a complete journey in my mind before making a dish and calling it a recipe :)

What do we need in a Colorado weather, A perfect Sunday morning. Hot panini and hot ginger tea. Eating healthy doesn’t means tasteless (Knowingly that i am not a huge paneer (cottage cheese ) fan. But this panini is worth trying. This is a great put together recipe of cottage cheese and salad altogether pressed to perfection for a hot panini.

I feel good about the fact that if I have a craving or want to eat something really bad. I would just make it. Doesn’t matter if its 12:00 noon or 12:oo midnight!

Beet Root and Fruit Detoxifying Juice

Sometimes, its hard to find the right words to express how much your “mom” means to you, She has always been my teacher and guide. She visited me last year and I tell you my life got changed forever for a healthy living.  She taught me so much about juices, raw veggies and fruits. It used to feel so good to actually cook with her after a long time.

This is one of my mom’s favorite juice recipe that i got hooked. She loves to use beet root a lot, would use it for a salad, face mask, juice or a sabzi (vegetables). Its best at giving a nice color and the nutritional properties it has.  Reason why i like it, It feels so refreshing after a nice workout.

Jeera Cookies

I remember my mom giving me 10Rs to go buy the jeera cookies from nearest convenience shop for the guest that has just arrived. The whole packet will be gone in like 60 seconds. These cookies reminds me of those times that i have spent laughing and having a good time with my family.

As most of you know, I  am a teaholic, I love ginger and cardomon tea and always ready to give people a good company for tea. I believe tea time is best time shared with friends for nice gup shup (chit chat), so why make jeera cookies? I went to the  Indian grocery store and was looking for something like this, but could not find one.  After i got back home I decided to make Jeera cookies just to have a feeling of good old times plus my craving for those cookies was on some other level so i had to just make it:) !! Believe it or not They came exactly like  How i used to  eat it when i was 10 or 12 years old.

Tadka Paneer Tikka

This is one and only famous recipe among vegetarian & non-vegetarian. I like to call it paneer tikka with a tadka and reason being this recipe does have a tadka from mustard oil. Its one of the best paneer recipe that can be served as starter on as an accompaniment. I like the fact that this recipe comes out really colorful. The flavor would just let your guest be speechless!  I wholeheartedly can call this recipe worth mouth drooling!
